Lunchtime Fun

I love dumplings. One of my favorite meals when I was a kid was my grandfather’s homemade beef stew because I knew that he would make dumplings to go with it. Pillowy mounds of fluffy dough steamed in broth. Yum!

The kids are home from school today. It is SUPER cold here and I couldn’t bring myself to send them. I’m a softy like that. So I thought I would make lunch a little fun for them because they were missing school (which REALLY upsets Chloe).

Gavin won’t eat soup unless it comes out of a can or box so I made some chicken noodle soup and added the homemade dumplings on top. Not the healthiest of lunches, but fun and comforting on a cold Winter’s day.

This is my grandfather’s recipe and it comes together pretty quickly with only 5 ingredients. Every time I make it, Gavin tells me that I have to teach him to do it so he can make his own when he moves out one day.

Grampy’s Homemade Dumplings

Ingredients:

2 c flour

1 1/2 t salt

1 T baking powder

2 T vegetable oil

1 c warm water, broth, soup, or stew
Method:
Sift flour, salt and baking powder together into a medium-sized bowl. Add oil and water or broth, and mix. Add more water as needed until dumplings are soft and not at all dry. Dough will be very wet and sticky. Add dumplings on top of stew or soup using a large wooden spoon. Cover and reduce heat. Steam dumplings 4-5 minutes. (Do in batches if you are using a small pan.) Serve dumplings in broth, soup, or stew garnished with chopped parsley or chives, as desired.
